
After being a student for the longest time, you start getting used to waking up unpleasantly early hours in morning. This semester has done a 180 on me where my classes only start after 6pm. So after arriving home at 10pm after my lecture and having eaten my dinner at 5pm i felt like something to nibble on while i finished the remainder half of the new Harry Potter book. To keep with the theme of familiarly different i made Chocolate & Zucchini Muffin. Chocolate muffins being the familiar and Zucchini being different :p In my bed i gobbled the muffins while reading my book which turned out to be not such a good idea as the wedge between the pages started trapping crumbs. I read till 6am - my body clock is so screwed up ...
Chocolate & Zucchini Muffins
yeilds 12 muffins
240 g all-purpose flour
40 g unsweetened cocoa powder
1 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt
110 g butter, softened
160 g light brown sugar
1 tsp vanilla extract
1 tsp instant coffee granules (the Nescafé type, the stronger the better)
3 eggs, at room temperature
280 g zucchini, unpeeled, grated
170 g chocolate chips
2.Whisk together the flours, cocoa powder, baking soda, baking powder and salt
3.Cream butter and sugar
4.Add in the vanilla extract and espresso powder, then the eggs, one at a time
5.Mix in half of flour mixture.
6.Coat grated zucchini and the chocolate chips with reserved flour mixture
7. Fold in the batter, and blend thoroughly
8.Spoon mixture into muffins tin.
9. Bake for 30minutes.
