Choco Cupcakes Roche surprise!
how long has it been since! omg.. way way way too long
ANYWAYs, today, i decided to try putting roche into my chocolate capcake. but i can't tell you how it tastes cuz i'm actually fasting off chocolate, carbonated drinks and fast food till easter. it's like a diet, with lent as an excuse. haha..

oh. btw, for those who don't know, I GOT A KITCHEN AID!! hehee.. eric got it for me! isn't he the best!

The Swirl that got in me into a swirl
YAY! The exams are over!
While others choose to celebrate the end of an exam with parties and booze. My celebration of choice is to B(C)ake! But as a start, I decided to do something quite simple to practice my skills that has been left un-honed for the past few months. My choice was plain ol' vanilla cupcakes. The baked cakes came out perfect! It has the perfect combination of moistness and sponginess and the perfect domes. But, it went all downhill with the icing. I was trying to imitate the 'swirl' done in the recipe book but as you can see below, It was a disaster !

1. Icing done too thinly + visible cake = FAIL
2. BLOB = FAIL
3.Thin edges = FAIL
4. Incomplete swirl = FAIL
5. Too much + too flat = FAIL
After practicing the swirl on 12 cupcakes, i decided i wasn't meant for the swirl! I flatted all the swirls and converted them into what is known as the easy peasy ' flat spatula'. YAY!

Plain ol' vanilla cupcakes
24 cupcakes
2¾ plain flour
2teaspoons baking powder
200g unsalted softened butter
1¾ caster sugar
4 eggs
1 teaspoon vanilla extract
1 cup milk
- Preheat oven to 170°C
- Cream butter and sugar until light and fluffy
- Add vanilla
- Mix in eggs one at a time
- Mix in flour and milk (start and end with flour)
- Spoon batter into cupcake tins
- Bake for 20 minutes
- Cool for 30 minutes before frosting
200g unsalted butter
½ cup milk
1 tablespoon vanilla extract
8 cup icing sugar
- Cream butter
- Mix in milk, half of the sugar
- Add in remanding sugar (add more milk and sugar to desired consistency)

WTO
Not even a single post for the WHOLE month of October !

Sadly, this is not going be a post about my baked goods as I'm still in the midst of my exams. So to fill in the blank for the month of October, I shall introduce to you, a special presentation of a temporary program called WTO until our normal programming returns.
This acronym stands for Weird Tram Occurrences. For those of you who have taken public transport, I'm sure have have experienced WTO. For some reason odd balls enjoy taking public transport as us 'normal' folks do. And as the tram is my main for of transport I experience it almost everyday.
My WTO moment for today is 3 Chinese old ladies arguing loudly in Hokkien, one insisted they were in Camberwell, another stood her ground and said they were Hawthorn while the other was just clueless. They were in Kew.

hey guys.
as you all know, i'm in UK now..
and yesterday was a day of a foodie pilgrim.
the to must go places to eat are Selfridges, for their salt beef sandwich, and Marylebourne to Seashell's restaurant for Fish and chips.

honestly, they weren't as good as a had expected. maybe cuz i had too high of an expectation.
haha.. what to do.. haven't had them in YEARS!!! the mind takes over and imagines it to be greater than it really is i guess. hahaha..

What did you eat today?
On this totally uninteresting day, i ate 2 interesting things:
1.Sea Urchin
My mom has been trying to hunt these down since the day she saw them on TV. They described the taste to her as sweet. I can describe only them as having the whole sea in your mouth. Good or bad you decide.
2. Crispy Sushi
You know how the seaweed (nori) gets all wet and chewy when you get your sushi roll. Well, now they have a separate compartment for each. So you'll always get crispy seaweed. But i must say more plastic = not very environmentally friendly.
