Destress


In the midst of all the stress on try to complete and perfect my Analytical Techniques practical report, I decided to give myself an hours break just to clear my head. So I got this recipe off my cousin, and went over to Safeway, and started by de-clouding therapy.

Oreo Cupcakes with Vanilla Buttercream Makes 12
1 pkg. (2-layer size) chocolate cake mix
1 pkg. (250g) PHILADELPHIA Cream Cheese, softened
1 egg
2 Tbsp. sugar
48 Mini OREO Bite Size Chocolate Sandwich Cookies

1. PREHEAT oven to 160°C. Prepare cake batter as directed on package; set aside. Mix cream cheese, egg and sugar until well blended.

2. SPOON cake batter into each of 12 paper- or foil-lined medium muffin cups, filling each cup about half full. Top each with about 1/2 Tbsp. of the cream cheese mixture and 1 cookie. Cover evenly with remaining cake batter.

3. BAKE 19 to 22 min. or until toothpick inserted comes out clean.


Vanilla Buttercream Frosting

110g butter
3 1/2 cups powdered sugar, sifted
1/8 cup milk
1 /2 teaspoon vanilla

1. beat butter until creamy, scrape bowl
2. add sifted powdered sugar, milk, and vanilla, beat until combined
3. add more powdered sugar until you get to the consistency you want (not too stiff so that its hard to pipe)
4. you might need to add a little milk if its too stiff, this is your chocolate buttercream
